Coriander Chicken Curry: Fresh & Flavorful Dish
- DIFFICULTY: EASY
- 30 MINS
Ingredients
- 500g chicken (boneless, cut into pieces)
- 2 tablespoons oil (vegetable or coconut oil)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 3-4 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, slit (optional, for heat)
- 1 tablespoon ground coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin powder
- Salt to taste
- 1/2 cup water (adjust as needed)
- 1/2 cup coconut milk (optional, for creaminess)
- Fresh hydroponic coriander leaves, chopped
- Fresh coriander stems (optional, for extra flavor)
- Juice of half a lemon
Method
- Sauté the Aromatics: Heat oil in a large pan over medium heat. Add chopped onions and sauté until golden brown and soft (about 5 minutes). Add the garlic, ginger, and green chili, and cook for an additional 2 minutes until fragrant.
- Cook the Spices: Add the ground coriander, turmeric, garam masala, red chili powder, and cumin powder to the pan. Stir well and cook the spices for 1-2 minutes, allowing the oil to separate from the mixture.
- Add Tomatoes and Chicken: Pour in the pureed tomatoes and cook until the oil begins to separate from the gravy. Add the chicken pieces, salt, and mix to coat the chicken in the spice mixture. Cook for 5-7 minutes until the chicken is lightly browned.
- Simmer the Curry: Add water to the pan and bring it to a simmer. Cover and cook for 15-20 minutes, or until the chicken is fully cooked and tender. If you prefer a creamier texture, add coconut milk and stir to combine.
- Add Fresh Coriander: Once the chicken is cooked, stir in the freshly chopped hydroponic coriander leaves and cook for another 2 minutes. This will infuse the curry with fresh, vibrant coriander flavor.
- Finish the Dish: Squeeze in the lemon juice, stir well, and taste for seasoning. Adjust salt or spices as needed.
- Serve: Serve the coriander chicken curry hot with steamed rice, naan, or your favorite flatbread. Garnish with extra fresh coriander leaves for a vibrant touch.
