Basil and Cherry Tomato Bruschetta

Toast the Bread:

• Preheat your oven to 200°C (400°F).
• Arrange the bread slices on a baking tray and toast them for 5-7 minutes, or until golden and crispy.
• Once toasted, rub each slice with the cut side of the garlic clove for a subtle garlicky flavor.

Prepare the Tomato-Basil Topping:

• In a mixing bowl, combine the diced cherry tomatoes and chopped basil leaves.
• Drizzle with olive oil and balsamic vinegar (if using). Add salt and black pepper to taste. Toss gently to combine.

Assemble the Bruschetta:

• Spoon the tomato-basil mixture onto each toasted bread slice. Ensure the topping is evenly distributed.

Serve Fresh:

• Arrange the bruschetta on a serving platter and serve immediately.

Serving Suggestions:

• Pair with a chilled white wine or sparkling water for a refreshing combination.
• Add a sprinkle of grated Parmesan or crumbled feta for an extra layer of flavor.

Pro Tip:

Eewa Farms’ cherry tomatoes bring a natural sweetness, while their fresh basil adds an aromatic burst. For an elevated twist, try roasting the cherry tomatoes with olive oil and garlic before assembling.
